MapleTownnoodles  hit themarket
  The Maple Town noodles of Tongdexing Noodle Shop,a beloved summer special in Suzhou,hit the market aday before Lixia Day(May5).Each branch shop sup-plied300servings of noodles.
  Traditionally,the Maple Town noodles usually goes on the market in June,but with the promotion of ‘ ABite of China’ Season Two,more customers called for an earlier supply,making the noodle shop owner change the original custom.Last year the selling of the Maple Town noodles began before May1,and this year,as the temperature was cooler,the time was postponed toMay4.
  Temperature is critical in making the Maple Town noodles,as one special ingredient,fermented gluti-nous rice,that is used to enrich the flavor of its noodle soup,requires a temperature of over25degrees centi-grade to brew.Other ingredients of the stock for mak-ing the noodle soup are the swamp eel,the river snail,and shrimp heads.The topping of the noodle is finely slow-stewedpork rib without bones.
  On Lixia Day,each Tongdexing Noodle Shop branch prepared350servings of the Maple Town noodles and soldout during lunchtime. (SuzhouDaily)
